the best way to not change fonts is to have all fonts applied in a doc installed on both/all platforms concerned.

I am still running High Sierra and don't own Iowan Old Style – so I am of no help to you, sorry. But if you do not need Black for your job, I would try to Delete or Deactivate the Black variants in Font Book – may that does the trick for you!

Again – the Baseline is defined by the Font used – so I would prefer not to leave my Font at all. Besides customising your Font you can combine within this font all Latin Characters with all Combining Diacritical Marks in the way I wrote before and all will be fine.
