OK... I'm probably overlooking the obvious, but suppose I've defined
a new paragraph style. How do I remove it / undefine it, so that it
no longer appears in the Styles pallet?

While in the StyleSheet view (cmd-3) — click the minus button in lower left corner, or cut, or simply press the delete key.

Ben is right: you can delete styles using each document's style sheet view. You can get there in a variety of ways, the most commonplace of which is probably the menu View > Style Sheet.
