On my iMac, font in Find/Replace varies according to the font of Normal style in the active document window when Find is invoked.
When all document windows are closed and Find window is left open, the font in the Find window changes to either Times New Roman or Lucida Grande.

Hamid is right, the font of the Find panel updates itself to reflect the "Normal" paragraph style of the frontmost document. If there is no document window open, I believe the font defaults to the font used in your Nisus New File (new file template).
