You'll want to use Apple's typography panel:
1. Select the text you want to affect.
2. Use the menu Format > Font > Show Fonts.
3. From the Apple Font panel that just appeared, click the little "gear" button/menu in the lower left corner and select Typography...
4. You can now use the Typography panel to turn on special font features like old style figures, glyph variants, etc.
I should note that these special typographic features are font specific and depend entirely on Apple's support for them.

Wow. That was easy and has brought me to a higher level of Mac-love. Adobe Garamond Pro 4-eva.
Thanks, Martin.
Thanks, Martin.

It's nice to have a reminder of this, because I keep losing track of where I can find this functionality, and I bet a large proportion of Nisus users have no idea it's even there. The Apple controls are buried pretty deep -- a lot of unintuitive mouse-clicks and head-scratching in there -- and perhaps it would be nicer to have a Nisus wrapper for this as well? I would love to see something like an "OpenType features" pallette in a future version of Nisus.
